Here is the recipe for spaghetti balls from “La Belle et le Trochard”

It is a mythical scene from a cartoon which is no less so: in The Lady and the Tramp, a classic Walt Disney animated movie released in 1955, Lady and Clochard meet at Tony’s Italian restaurant. At the table, the couple are served a plate of spaghetti balls. The two dogs, who are each looking to one side, then eat the same spaghetti and end up kissing each other on the tune of Bella Note. In her column on Europe 1, the journalist Marion Sauveur suggests redoing this recipe, in love or not.

The spaghetti balls of “La Belle et le Trochard”


For the meatballs:

– 175 g of ground beef

– 100 g of ground veal

– 25 g of stale bread

– 1 glass of milk

– 15 g of grated Parmesan

– 1 egg

– 2 tbsp. to s. of flour

– 1 C. to s. olive oil

– Cell

– Pepper

For the sauce:

– 800 g tomato pulp

– 1 onion

– 1 clove of garlic

– half a glass of red wine

– 1 glass of milk

– Olive oil

The steps of the recipe:

1. Crumble the bread in a bowl and cover with milk.

2. After 10 minutes, wring out the bread in your hands and mix the bread with the two minced meats.

3. Add the egg, Parmesan, salt and pepper and form balls by rolling them between your hands.

4. Reserve in the fridge.

5. Brown the chopped onion and garlic in the oil.

6. Once browned, add the tomato pulp and herbs.

7. Simmer for 20 minutes.

8. During this time, pass the balls in the flour, before making them come 3 minutes in a pan with a little oil. They should be golden brown.

9. Then add them to your sauce, along with the wine.

10. Cook for 1h30 on low heat.

11. Five minutes before the end of cooking, add a glass of milk.

12. Add your spaghetti cooked al dente. And once soaked in the sauce, serve in a large dish for two.
